What is espresso?

An espresso is a strong, concentrated coffee of about 30 ml, made by forcing hot water under high pressure through finely ground coffee.

Fun fact: The name espresso comes from Italian and means "pressed" or "made quickly," referring to the fast brewing process.

Suitable coffee for espresso

Generally, we use darker roasted coffees for espresso. This is not a strict rule; if you are looking for more acidity or fruitiness, you can certainly choose a lighter roasted coffee.

Our basic recipe

Consider this a starting point. From there, you can start experimenting.

Espresso

LIGHT
18 g in · 60 g out (1:3.4 brew ratio)

MEDIUM
18 g in · 45 g out (1:2.5 brew ratio)

DARK
18 g in · 40 g out (1:2.2 brew ratio)

We always start with the brew ratio. The extraction time is not a starting point, but it is a useful check afterwards.

If the coffee is sour, grind finer (extraction time will be longer).
If the coffee is bitter, grind coarser (extraction time will be shorter).

Step-by-step plan

  1. Weigh 18 grams of coffee.
  2. Grind the coffee finely.
  3. Distribute the ground coffee evenly in the portafilter.
  4. Tamp the coffee firmly with a tamper.
  5. Place the portafilter in the machine and start the extraction.
  6. Choose the best brew ratio for your roast.
